Easy Albondigas

Meatballs:
1 lb ground pork
1 onion, grated and squeezed to remove liquid
1/2 small zucchini, grated and squeezed to remove liquid
1 egg
1/4 cup panko
2 t dried oregano
1/2 t cumin
salt and pepper

Combine ingredients and roll into balls (approx. 1" in diameter).
Place meatballs on cookie sheet.
Bake at 400F for 10 minutes.
Turn, and bake for 10 more minutes.

Meanwhile, make sauce:

1 T olive oil
3 cloves garlic, minced
1 T pureed chipotles in adobo
1 large (28 oz) can tomatoes

Heat oil and saute garlic until pale gold. Add chipotles and tomatoes and puree with stick blender.

When meatballs are done, add to sauce and simmer for 10 minutes.

Serve with rice.
