What do you do when you when you have leftover roasted sweet potatoes and two hungry boys? Make muffins!
This is a modification of this recipe: http://www.willcookforsmiles.com/2013/10/sweet-potato-muffins.html -- it is a great recipe but too sweet and I do like to use some whole grain flour in my muffins.
Wet ingredients:
3 eggs
1/3 cup of sour cream
1 cup of mashed sweet potato (1 medium sweet potato)
3/4 of oil, applesauce or a mixture of the two (the mixture is the best)
1/2 cup brown sugar
1 teaspoon vanilla
Dry ingredients:
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 tablespoon cinnamon
1/2 teaspoon grated nutmeg
pinch salt
1/2 teaspoon baking soda
2 teaspoons baking powder
Preheat over to 400F
Mix together wet ingredients and dry ingredients. Pour wet ingredients into dry and mix just until mixed. Fill 12 muffin cups and place in oven. Turn heat down to 350F and bake for 22-25 minutes, until a toothpick stuck into the middle of a muffin comes out cleanly.
